
The Nonya cooking ingredient Curry Powder has a blend of spices for curry powder
and tastes;each cook weather it containens more or less of one or the other
ingredient is a matter of individual taste. The spices used are generally
unvarying except for ingredients such as onions, ginger and whole spices. So
many brands of ready mixed curry powders exist that cooking curry is much easier
today, unlike in our mother's day,when each blend had to be specially mixed.
However, if you wish to make your own, here are some blending suggestions.
Meat Curry Powder
400gm - ground coriander
150gm - ground aniseed
100gm - ground cummin
100gm - black and white pepper
150gm - chilli powder
80gm - ground turmeric
Ground Separately:
2 cinnamon sticks, about 5 cm long
10gm cardamoms
8 cloves
Fish Curry Powder
400gm ground coriander
150gm ground aniseed
150gm ground cummin
100gm - black and white pepper
150gm - chilli powder
70gm - ground turmeric
Ground Separately:
2 cinnamon sticks, about 5 cm long
10gm cardamoms
6 cloves
6 star anise
40gm fenugreek, left whole
Mixed spices and store in airtight bootles. to make paste, add 2 tablespoons
water or cooking liquid for every tablespoon of curry powder.
