500 g tenggiri (Spanish mackerel) or pari (Stingray )
4 tablespoons oil
1 stalk lemon grass, bruised
4 tablespoons tamarind powder
700 millilitres water
1 teaspoon salt

2 red chillies
2 cloves garlic
1 teaspoon ground turmeric
2 tablespoons black pepper
1 tablespoon galingale powder
Ikan Kuah Lada - Nonya Seafood Recipes Method Step by Step:
1. Cut fish into large pieces. Halve brinjals lengthwise, remove ttalk and make a cut right down two-thirds of each half.
2. Fry rempah in oil until fragrant. Add bruised lemon grass. Blend tamarind powder with water and add to spices. Bring to a boil and add fish and salt. Simmer for 2 minutes and add brinjals. Simmer for 5 minutes more and serve with sambal belacan.
