Sambal Pomfret Ingredients:
1 bawal hitam (black pomfret), about 400 g
4 tablespoons oil
2 tablespoons preserved soy beans (taucheo), drained & mashed
2 teaspoons sugar
1 tablespoon tamarind powder
300 millilitres water
2 daun limau purut, shredded
Sambal Pomfret Rempah:
10 dried chillies
5 red chillies
10 shallots
2 cloves garlic
1 stalk lemon grass
1 tablespoon belacan powder
Sambal Pomfret Method Step by Step:
1. Fry whole bawal hitam pomfret in oil for about 8 minutes until
brown. Leave aside.
2. Remove half the oil and fry rempah until fragrant. Add preserved
soy beans, sugar and tamarind mixed with water. Bring to a boil. Pour
sambal over bawal hitam pomfret and sprinkle with shredded
daun limau purut.
